Brown Sugar Peach Preserves 2 lbs peeled* and pitted peach quarters, (from 7-10 RIPE peaches) 3/4 cup packed light brown sugar 2 Tbsp fresh lemon juice Pinch of kosher salt Bring all ingredients to a simmer in a medium sized saucepan, stirring continuously until some liquid is released and the sugar dissolves. Simmer for 1 hour, stirring occasionally. After about 45 minutes the peaches should be mostly broken down and you can smash any larger pieces of fruit remaining against the side of the pot
